Design and Ambience

The design of Taiko Dubai is distinctly inspired by traditional Asian materials, formalism and craftsmanship set in a contemporary context. Guests walk into a dramatic ambience of magical mystery thanks to the darker color scheme. Standout design elements include an open kitchen revolving around a char-fired robata grill and a sushi bar angled into the space at 45 degrees to stage the drama of food preparation. The majority of counter elements across the venue are finished with black pebbles, sourced from ancient riverbeds in China. The center of the dining area is dominated by a stylized ‘tree’ metaphorically representing the significance of the four seasons – decorated in cherry blossoms in spring, lush greens during summer and glowing red acorn in autumn.

Offering the same contemporary cuisine as Taiko Amsterdam, taste buds take flight as guests indulge in the flavors and textures of the Far East, varying from delicate to dramatic but always surprising and original. Offering a sensational food adventure, with Schilo’s experience in the region, he is taking advantage of amazing spices and local produce to create specialties such as his famous watermelon sashimi. The menu includes bold and elegant dishes that deliver a perfect symphony of flavors.

The chef

Chef Schilo Van Coevorden and Chef Pedro Banzuzi

Chef Owner Schilo Van Coevorden grew up in Amsterdam, just around the corner from the Conservatorium hotel. His heart lies in Asia though. As a chef, while being trained in classical French cuisine, he was inspired most by the exotic flavors from the Far East. He is most known for Taiko Cuisine by Schilo, an award-winning restaurant in Amsterdam. Throughout his career, Schilo has worked in the Netherlands, Belgium, the UK, UAE, Japan, China and Spain.

Chef de Cuisine Pedro Banzuzi brings over two decades of culinary expertise, including leading the award-winning Taiko Amsterdam kitchen under the mentorship of Chef Schilo. Originally from Angola, Pedro blends innovative techniques with Asian-inspired flavors, offering guests in Dubai a fresh and bold dining experience, while upholding Taiko’s commitment to sustainability.
